The soba at Kanoya has funori (a type of seaweed) kneaded into it for a unique texture and smooth throat-feel.
This "funorisoba" is served on a square board called a "hegi".
Customers can try the "hegisoba" which is served in bite-sized bundles, or "nihachisoba",
which is made with a mixture of 20% soba flour and 80% udon flour.
The tempura seasoned with all-natural Sado salt is also highly recommended.
